Glynn House Famous Buttermilk Pancakes 2 cups unbleached flour 2 tsp. baking powder ¼ tsp. baking soda 2 cups buttermilk ½ cup milk 2 large eggs, separated ½ stick unsalted butter (melted) 1 tbsp. pure maple syrup Optional: 2 cups fresh or frozen berries, diced peaches or other fruit -Pre-heat griddle. -In a large bowl, mix flour, baking powder and baking soda, set aside. -Beat egg whites until stiff but not dry. -Mix buttermilk, milk, maple syrup, egg yolks and melted butter. -Gently stir buttermilk mixture into the flour mixture. Fold in egg whites. Make sure not to over-mix! -Lightly butter griddle and cook pancakes until top bubbles, flip and cook other side until golden. -Serve with real maple syrup.
